- TOOLS: weigh scale, measuring cups, measuring spoons, chef knife, rubber spatula, can opener
- HOLD TIME: 3 days
- YIELD: 95 fl oz
- QUALITY INDICATOR: red in colour, rough chop texture in sauce and visible basil throughout
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Open pasta sauce can and pour into mixing bowl. Next, add the rest of the ingredients & mix together thoroughly.
- 2. Pour sauce into insert and cover with lid, label, date, and store in cooler at 35F-40F/3.5C-4C until use. (CCP1)
