- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.

1. Remove the required rack of ribs from the freezer, keeping it in its original packaging to prevent contamination.
2. Place the ribs on a tray or sheet pan to catch any drips during thawing.
3. Store the tray with ribs on the bottom shelf of the cooler, ensuring the cooler maintains a temperature of 4°C (40°F) or below. 4. Label the tray with the date and “Thawing”; allow the ribs to thaw fully over 24–48 hours depending on thickness.
5. Before use, check that the ribs are completely thawed by gently pressing the center. Never thaw ribs at room temperature to maintain food safety.
