- TOOLS: green cutting board, weigh scale & chef knife
- STORAGE: insert with insert lid
- HOLD TIME: 2 days
- YIELD: 13.44 ounces
- NOTES: 1/4” dice for final result (Refer to picture steps)
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Peel onion skins, next wash with cold water. With a paper towel pat onions until dry. (Refer to picture Step 1)
- 2. Cut yellow onions in 1/2 (Refer to picture Step 2)
- 3. Slice onion in 1/4” slices across & down. (Refer to picture Step 3)
- 4. Slice onion across & horizontal. (Refer to picture Step 4)
- 5. Slice onion down & across again. (Refer to picture Step 5)
- 6. Store in an insert lid, label, date, & store In cooler at 35F - 40F/3.5C-4C until use. (CCP1)
