Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
**Important to be in the cooler when portioning this item. To prevent the breading from coming off.**

- TOOLS: Cambro, whisk, mixing bowl and plastic wrap.
- HOLD TIME: 3 Days
- STORAGE: Cooler (2°-4°C / 35.6°-39.2°F) Freezer Storage (0°--18°C / 32°-0.4°F) 30 Days
- SHELF LIFE: 3 Days
- INSTRUCTIONS
- 1. Cut chicken breast (fresh) into approx 1" chunks.
- 2. Marinade in buttermilk overnight in cooler (min 8 hours)
- PREP
- 3. Drain from buttermilk and Dredge buttermilk marinaded Chicken chunks in NEXT JEN batter.
- 4. Roast dusted chicken bites in oven 300°F until internal temp of 165°F. Approximately 7-8 minutes.
- Probe largest pieces to ensure thorough cooking and internal temp is reached..
- 5. Cool in walk-in cooler (2°-4°C / 35.6°-39.2°F) until minimum internal temp of 4°C / 39.2°F is reached
- 6. Portion into 6oz portions, day dot and keep in cooler for up to max 3 days.

7. Once completely cooled and IF required for par level/inventory management, the marinated chicken breasts can be portioned individually, labeled and frozen at this point.
METHOD
Layer in single layers on parchment lined baking sheets, (separating any layers with parchment paper) and freeze on baking sheets prior to portioning. This will keep the chicken from sticking together. Once completely frozen (check after 1 hour), portion into bags and label. Ensure the portion bags are tightly wrapped to prevent freezer burn. -
IMPORTANT NOTE:
DO NOT cook from frozen. Thaw required number of portions overnight in walk-in cooler (2°-4°C / 35.6°-39.2°F)
