- Recipe Instructions:
- TOOLS: rubber spatula, measuring cups, nitrile gloves, green cutting board, chef knife & mixing bowl
- STORAGE: insert with lid
- HOLD TIME: 2 Days
- YIELD: 20 ounces
- QUALITY INDICATOR: jalapeños are fresh, bright green, crisp, garlic is fresh & not discoloured.
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Wash fresh jalapeños over cold water. Cut off stem end & split in half over a clean cutting board & discard 1/2 the seeds in the center of the pepper.
- 2. Finely chop jalapeños into a small mince, (Refer to picture) NOTE: can be minced in the food processor.
- 3. Add finely chopped jalapeños into the mixing bowl with the minced garlic. Next, mix together with a rubber spatula to ensure an even mix.
- 4. Put mixture into an insert with lid. Label, date & keep in cooler at 35F-40F/3.5C-4C until use (for a prep recipe). (CCP1)

IMPORTANT NOTE: - This prep procedure must be done before you make any recipes requiring this mix.
- Must be fresh jalapeños. Do not mix in any liquid from garlic pail – drain excess liquid.
