- Recipe Instructions:
- TOOLS: small stock pot, large metal serving spoon, mixing bowl, measuring cups, weigh scale
- STORAGE: portion bags and insert with insert lid
- HOLD TIME: 2 days
- YIELD: 12 x 3 oz. portions
- QUALITY INDICATOR: evenly browned in color & thoroughly seasoned.
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Heat oil in a small stock pot over medium heat.
- 2. Sauté diced onion to sweat. Next, add ground beef & let it brown. (CCP3)
- 3. Add minced garlic, sauté & bring to simmer until all liquid is gone. Stir constantly to prevent burning. (Refer to picture Step 1) (CCP3)
- 4. Pour beef mixture into a mixing bowl. Sprinkle Tex Mex seasoning evenly onto the cooked beef mixture & mix thoroughly. (Refer to picture Step 2, 3 & 4 ). Pour mixture into the insert & ice bath to cool to 35F-40F/3.5-4C (CCP4). Cover with lid, label, date and store in cooler at 35F-40F/3.5-4C until use. (CCP4)
- 5. Portion into 3 oz. bags.
- 6. Roll bags to seal, date & store covered in cooler at 35F– 40F/3.5C-4C until use. (CCP1)
- IMPORTANT NOTE
- - DO NOT use Texas Dry rub seasoning, correct seasoning is Tex Mex Seasoning.(PREP)
