Fish Stick, Par Fried

- Recipe Instructions:
- TOOLS: 3 mixing bowls, weigh scale, whisk, blue cutting board, chef knife measuring cup, parchment paper, drip tray, baking sheet, nitrile gloves, portion bags, cambro with cambro lid, drip tray, fryer skimmer
- STORAGE: cambro with cambro lid. Stored in freezer.
- HOLD TIME: 3 days in freezer
- YIELD: 20 pieces
- QUALITY INDICATOR: very light yellow pieces
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Cut defrosted fish into half, using a full length-wise bias cut – creating 2 halves/pieces.
- 2. From the 2 halves/pieces, cut each halve into 3 equal strips, approx. 1-1.25 per fish stick
- 3. Prepare the fish batter station in this order:
- 4. INSERT 1: Fish pieces
- 5. INSERT 2: Seasoning flour6.
- 6. INSERT 3: Prepared Fiji Blond Batter (use fresh & cold beer)
- 7. Take a few fish pieces at a time, dredge in seasoning flour and than into the batter - coating well.
- 8. Lift one piece of battered fish at a time and remove off any excess batter on the side of the bowl. Gently place into the deep fryer (without basket), swaying the fish back & fourth. Fry for approx. 20-30 seconds only at 350F. (Internal temperature reaches 165F (CCP3)
- 9. NOTE: Par-cook the batter until firm, fish will become very light yellow in color.
- 10. Remove par-fried fish from the fryer with a fryer skimmer and place into an empty fryer basket or drip tray on a baking sheet to remove excess oil.
- 11. Cool fish to 70F. Transfer to a new lined baking tray - do not stack fish pieces. Next, put tray into freezer until 0F to-10F. (CCP3)
- 12. Next, portion frozen fish, 3 pieces per bag. Put inside the cambro with lid. Date, label & store in freezer until use. (CCP3)NOTE: frozen par-fried fish sticks can also be stored in a cambro with a tight lid - on the cooks' line freezer.
