- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. In a large pot, add garlic and oil to pot, add teaspoon of salt.
- 2. Bring oil up to temperature - When garlic begins to crisp, turn off heat - move to a different burner. Do not overcook the garlic.
- 2. Allow oil mixture to cool thoroughly, transfer to a cambro and store in cooler for a 7 day hold time.
