- Recipe Instructions:
- TOOLS: weigh scale, 1/6" insert, nitrile gloves
- STORAGE: Cambro with cambro lid & online in a 1/6th insert
- HOLD TIME: per shift
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Open bag of cheese. Fill cheese 3/4 full into a 1/6th insert and place on the line.
- 2. Place original bag with left over cheese into a cambro with a tight lid.
- 3. Date and label the cambro container, place back into the cooler at 35F-40F/3.5C-4C until use. (CCP1)

IMPORTANT NOTE:
- NEW: use yellow scoop for cheese on the cook's line
- DO NOT compress the cheese down
- DO NOT combine the line cheese (cheese in use) with the cheese from the bag.
- Ensure cheese does not stick together
