- TOOLS: weigh scale, baking sheet, nitrile gloves & parchment paper, portion bags
- STORAGE: cambro with cambro lid
- HOLD TIME: 7 days in freezer
- YIELD: 5.5 Portions
- QUALITY INDICATOR: firm, frozen, breaded/coated pieces
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
**Important to be in the cooler when portioning this item. To prevent the breading from coming off.**
- 1. Line your baking sheet with parchment paper and pour out the frozen calamari onto the tray gently.
- 2. Separate the bodies and the tentacles onto the sheet.
- 3. Portion out bodies and tentacles. minimum 4.5-5 oz bodies, minimum 2-2.5 oz tentacles at most. Your total weight of the portion will be 7-7.5 oz per bag.
- 4. Any left over pieces can be used with the next bag being portioned.
- 5. Put portions into a cambro with lid. Seal bag, date and label. Place back into the freezer at 14F-32F/ - 10C- 0C until use. (CCP1)
