- Recipe Instructions:
- TOOLS: stock pot, whisk, measuring cup, measuring spoons
- STORAGE: insert with lid
- HOLD TIME: 4 hours
- YIELD: 132 fluid ounces
- QUALITY INDICATOR: gravy will be brown in colour with a smooth “milkshake” consistency, not lumpy.
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Bring water to a boil.
- 2. Whisk in beef gravy powder to the boiling water and return to a simmer. Constantly stir the mix to ensure that there are no lumps & the gravy is smooth. (CCP3)
- 3. Pour gravy into an insert & hold hot on steam table at 165F/74C. (CCP5)
