Bacon Pre-Service

- Recipe Instructions:
- TOOLS: baking sheet, parchment paper, nitrile gloves
- HOLD TIME: 4 hours
- STORAGE: 1/3 insert with drip tray
- YIELD: 15 pieces
- QUALITY INDICATOR: lightly crisp, lightly browned
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. With gloves on, evenly lay out bacon slices side by side and not over laping each other. (Refer to picture Step 1)
- 2. Put bacon tray into the oven and bake for 15 minutes at 350F, low fan, or until lightly crisped with most of the fat rendured out of the bacon slices. NOTE: bacon will still feel and look soft. (CCP3) (Refer to picture Steps 2-3)
- 3. Remove tray from the oven and transfer the cooked bacon into a 1/3 insert with a drip pan at the bottom to remove any residual oil from the bacon slices.
- 4. Place insert into the hot holding table, cover with lid and hold at 140F until use. (CCP5)

IMPORTANT NOTE:
- Cooked bacon slices must be replaced with fresh baked bacon every 4 hours
- This prep item is for any menu item on our menu as an add on or sub bacon on the order.
