- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.

1. In a Robot Coupe food processor, combine equal proportions (by ounces) of hummus and
chunky avocado.
2. Add cilantro, fresh lime juice, minced garlic, and salt & pepper mix to the processor
3. Pulse the Robot Coupe processor until the mixture reaches the desired consistency – not too thick and not too runny.
4. It is important to pulse rather than blend continuously to avoid turning the mix into a paste.
5. Once the dip is ready, transfer it to an insert, preferably with a tight-fitting lid or double wrapped to ensure freshness and prevent the avocado from turning brown.
6. Make the mix in small batches to maintain optimal freshness and reduce wastage.
7. Label with product name, prep date, and expiry, then store refrigerated below 40 F.
