- Recipe Instructions:
- PLATE: Tray plate, small soup bowl
- HOLD TIME: to order
- QUALITY INDICATOR: Salad mix is crisp and bright green in colour
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Place wings in fryer at 350°F for 4 minutes, temperature at 165°F (CCP3)
- 2. Remove wings from oil, shake 3 - 4 times to remove excess oil.
- 3. Toss in a bowl with choice of sauce or seasoning.
- 4. Spread garlic butter onto one side of the bread and place garlic buttered side down onto the flat top, toast until golden brown (CCP3). Cut on a lengthwise bias from corner to corner.
- 5. Place tossed caesar salad, piled high, in a soup cup. Sprinkle croutons & place shaved parmesan over the top. Plate salad onto 1 side of the tray plate. (Refer to picture)
- 6. Stack wings onto the opposite side. (Refer to picture)
- 7. Place garlic toast between the wings and salad. (Refer to picture)
- 8. Garnish with lemon wedge.
- 9. Ensure rim of the plate & bowl are clean. Serve immediately.
