- Recipe Instructions:
- TOOLS: Pizza Screen, Cutting Board, Pizza Cutter, Pizza Peel, 2oz Ladel, Tongs, Spoon
- PLATE: White Round + WINGS liner
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Remove premade pizza shell from the cooler and place on working surface to build
- 2. Using a 2oz ladle, scoop two ladles of pizza sauce onto the center of the dough. Spread in a circular motion - ensuring to fill the crevaces near the crust
- 3. Spread 3.5oz of pizza cheese over surface of crust, ensuring to not over crowd the center of the pizza. Spread 1 prep portion of protein of choice over the pie - ensuring to leave a loonie size space in the middle of the pie
- 4. Top with 0.5 oz black olives, 0.5 oz jalapeno's, and 1.5oz pizza cheese
- 5. Using the pizza peel, transfer pizza to the oven. Cook for 3 to 5 minutes until the cheese is bubbly and crust is golden. Ensure to check the crust throughout the cook time, you may need to adjust the position of the pie (move to a different part of the stone or rotate) if cooking too fast on one side.
- 6. Using the pizza peel, remove pizza from oven and transfer to cutting board, using the pizza cutter cut into 8 equal pieces. Place a WINGS liner on a white round plate and gently place pizza in the center of the plate.
- 7. Top with 0.5oz green onion and 1.5oz diced tomato. Using a spoon - dollop 2oz sourcream into the center of the pizza
- Serve Immediately

IMPORTANT NOTES
- Be mindful of pizza cooking! The oven can have hot spots - meaning you may need to move the pie to a different portion of the oven, screen, or rotate as needed.
- When there are toppings, be aware of 'gravitational toppings' Keep a loonie sized space in the middle of the pizza bare
- When cutting pizzas with toppings, be careful to not rip the toppings off! Take your time or gently move toppings as needed to keep even coverage
