- PLATE: Sheet pan with liner paper
- TOOLS: Fryer basket, SS bowl, tongs, yellow scoop, flipper, shaker (for Cajun seasoning)
- HOLD TIME: To order

COOKING TIME FOR FRIED EGGS:
Sunny Side Up: 4 minutes
Over Easy: SSU (4 min), flip and cook + 10 - 30 seconds
Over Medium: SSU (4 min), flip and cook + 30 - 60 seconds
Over Hard: SSU (4 min), flip and cook + 1 - 2 minutes
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Deep fry frozen potatoes in fryer basket for 4 minutes. Remove and toss with Grandpa J’s seasoning salt & dust lightly with Cajun seasoning using shaker.
- 2. Season patty with Montreal steak spice. Cook on flat top until internal temp. is 160°F (approx. 4 minutes each side.). Melt cheddar slice once cooked through.
- 3. Toast Brioche bun on flat top (both sides).
- 4. In small frying pan: Add 1 tsp margarine and fry egg Sunny Side Up - whites completely cooked and yolk soft (TIME: 4 min.)

5. On clean cutting board begin layering in order:
Red pepper aioli on top and bottom bun. On bottom bun: shredded lettuce, 2 slices tomato, 2 slices red onion (rings), burger patty with melted cheddar, 2 slices bacon, 1 scoop caramelized onions.
Move burger build to sheet pan with liner paper at this stage. Carefully place fried egg on top of caramelized onions and dust with Cajun seasoning.
Place top bun resting against the side of the built burger and skewer with 4” bamboo skewer. - 6. Serve with hot home-style potatoes and garnish potatoes with bias chopped green onions.
- 7. Ensure rim of plate is clean. Serve immediately.
