- PLATE: Dinner plate, side bowl, bar napkin.
- HOLD: To order
- NOTE: Steak Temperature is decided by guest.
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Season CAB Sirloin steak with Montreal Steak Spice, cook to guests desired temperature, use thermometer from the side, in the center of the steak to ensure correct temperature, pull steak from the grill when 2-3 degrees away from desired temperature, let steak rest and it will continue to rise in temperature.
- 2. Prepare order of French Fries in the fryer, until fries are golden brown and crispy, approx. 4 minutes 15 seconds. Transfer to SS bowl and season with Sea Salt. Transfer to side bowl, and plate on dinner plate with a napkin under the bowl, refer to picture.
- 3. Prepare salad, and transfer from SS bowl to directly on the dinner plate.
- 4. Garnish steak with Cowboy Butter (PREP)
- 5. Ensure rim of plate is clean. Serve immediately.
- IMPORTANT NOTE: Timing and presentation are the most important things to keep in mind when preparing the Steak Frites. Ensure that no item gets cold while waiting for the others to cook, and that each item appears as a distinct component of the whole dish.
