Short Rib Mac & Cheese

- Recipe Instructions:
- TOOLS: Frying Pan, Tongs, Rubber Spatula
- PLATE: Skillet, Sheet pan
- HOLD TIME: to order
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Prepare 1 portion of PREP Scooby (cavatappi) noodles in bain marie (water bath) for approximately 1 minute. Do not over cook.
- 2. In frying pan over medium heat, heat Alfredo sauce with 4 oz of cheese ( 1 oz is reserved for topping). Stirring continuously with a rubber spatula, heat until sauce begins to bubble and reaches 165F.
- 3. Add heated and drained noodles to sauce and mix well to combine.
- 4. Transfer mixture to cast iron skillet.
- 5. Sprinkle remaining 1 oz of shredded cheese and panko over noodles.
- 6. Place on lined bake sheet and bake in oven at 350F/177C for 5 minutes until cheese is bubbling. Ensure internal temperature is 165F.
- 7. Using half a hoagie bun, spread garlic butter onto the open side of the bun and place buttered side down onto the flat top. Toast for approx. 3-4 minutes, or until golden brown. Cut garlic toast diagonally. (Refer to picture) NOTE: ensure that each cut is a very sharp, pointed cut on a 45-degree angle.
- 8. While the noodles are baking in the oven:
- 9. In a frying pan over medium heat, heat one portion of CAB Short Rib and 2 oz of Beef Gravy.
- 10. Stir gently with a rubber spatula and heat until internal temperature reaches 170F, approximately 3-4 minutes.
- 11. Remove skillet from oven and garnish with Chopped Bacon. Top with Short Rib. Garnish the Short Rib with bias cut Green Onion.
- 12. Plating: on sheet pan with liner paper, with silicone trivet underneath the skillet. Place handle cozy on skillet handle and ensure handle does not extend beyond the sheet pan (it must be in the corner of the sheet pan). Serve with garlic toast.
