Sheet Pan Nachos: Beef

- Recipe Instructions:
- PLATE: 1/4" sheet pan (smaller one), WINGS liner paper, 2 portion cups
- HOLD TIME: to order
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Line a half sheet pan with one WINGS liner paper sheet in the middle of the pan.
- 2. Assemble first layer (20 chips) with just 1 portion of mixed cheese evenly spread over the chips. Cover the entire sheet of liner paper. Note: do not get any ingredients on the sheet pan, keep it on the liner paper.
- 3. Add remaining chips evenly over the top of the first layer, over the cheese.
- 4. Evenly spread the remaining portion of cheese mix over the chips.
- 5. Next, evenly distribute diced tomatoes, black olives and jalapeños over the last layer of cheese mix. Save the chopped green onions for garnish. (Refer to picture)
- 6. Place sheet pan in the oven at 350°F, low fan, for 5 minutes or until cheese is melted and starting to toast. Internal temperature reaches 165°F (CCP3)
- 7. Remove sheet pan from the oven and with a free hand, grab the parchment paper in the corner, pull to loosen the nachos and paper from the pan & transfer into sheet pan.
- 8. Heat 1 portion of spicy beef in the microwave for 45 seconds, temperature 165°F (CCP3)
- 9. Once nachos are transferred, portion out salsa and sour cream into 2 separate portion cups and add to the open area of the sheet pan. (Refer to picture)
- 10. Top nachos with spicy beef & garnish the top with chopped green onions.
- 11. Ensure the edges of the sheet pan are clean. Serve immediately.
- IMPORTANT NOTE:
- Make sure to use the WINGS branded liner paper.
- Jalapenos have been changed to DICED
- Pico dip has been changed to Salsa
