- TOOLS: Pizza Screen, Cutting Board, Pizza Cutter, Pizza Peel, 2oz Ladle, Tongs, Mixing Bowl
- PLATE: White Round + WINGS liner
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Remove Premade pizza shell from the freezer and place on workable surface to build
- 2. Using a 2oz ladle, scoop one ladle of pizza sauce onto the center of the shell. Spread in a circular motion - ensuring to fill the crevaces close to the crust, but avoid the crust itself..
- 3. Place chicken and 2 oz of Peri-Peri sauce in a stainless steel bowl, mix well. Sprinkle over pizza
- 3. Cut bacon into 1/4 inch pieces and spread evenly over pizza
- 4. Sprinkle the remaining amount of cheese on top of the pizza.
- 5. Using the pizza peel, transfer pizza to the oven. Cook for 3 to 5 minutes until the cheese is bubbly and crust is golden. Ensure to check the crust throughout the cook time, you may need to adjust the position of the pie (Move to a different part of the stone or screen) if cooking too fast
- 6. Using the pizza peel, remove pizza from oven and transfer to cutting board, using the pizza cutter cut into 8 equal pieces..
- 7. Using a squeeze bottle - drizzle 1oz garlic aioli in a zig zag fashion over the pizza. (Refer to picture) Garnish pizza with 0.5oz bias cut green onion (PREP) and 1.5oz shaved parmesan cheese.

- IMPORTANT NOTES!
- Be mindful of pizza cooking! The oven can have hot spots - meaning you may need to move the pizza to a different part of the oven, screen, or rotate as needed.
- When there are toppings, be aware of 'gravitational toppings'. Keep a loonie sized space in the middle of the pizza bare.
- When cutting pizzas with toppings, be careful to not rip the toppings off! Take your time or gently move toppings as needed to keep even coverage.
