- Recipe Instructions:
- PLATE: 1/4" sheet pan (smaller sheet pan), WINGS liner paper, 2 portion cups
- HOLD: To order
- NOTE: Garlic Parm Fries & Peri Peri Fries are same build, smaller portions.
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Prepare 3 orders of wings, until internal temperature is at 165. 8 wings per flavor of guests choice.
- 2. Prepare smaller portion of PERI-PERI fries as per recipe. (6 oz)
- 3. Prepare half portion of GARLIC PARM & HERB fries as per recipe. (8oz)
- 5. Arrange with orders of wings in straight lines and the orders of fries directly between each order. See photo for reference.
- 6. Place Garlic aioli and ranch on either side of the tray.
- 7. Ensure rim of plate is clean. Serve immediately.
- IMPORTANT NOTE: Timing and presentation are the most important things to keep in mind when preparing the Party Platter. Ensure that no item gets cold while waiting for the others to cook, and that each item appears as a distinct component of the whole dish.
