- PLATE: Tray, portion cup

- QUALITY INDICATOR: Golden brown In color; cheese not visible through breading; consistent size, shape and breading intact.
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Submerge frozen mozzarella sticks into the deep fryer and cook for 4 minutes. After 1 minute, shake the fry basket gently to ensure they are not stuck together. Internal temperature reaches 165°F (CCP3) NOTE: cheese will start to ooze
- 2. Remove from oil and shake the basket to remove any excess oil from the sticks.
- 3. Heat tomato basil sauce in microwave for 15 seconds, temperature at 165°F (CCP3)
- 4. In a row arrange 4 pcs of cooked sticks onto 1 side of the plate, then the last 4 (#) hash tagged on top. (Refer to picture)
- 5. Pour dipping sauce into a portion cup and place onto the open side of the plate. (Refer to picture)
- 6. Ensure the rim of the plate is clean, serve immediately.
