- PLATING: Sheet Pan, WINGS Liner Paper, Bamboo Pick and Ramekin

- NOTES: All burgers come with a bamboo pick (except for Veggie Burger)
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.

1. Season Beef patty with montreal steak spice and place beef patty on flat top & cook for 3:30 minutes at 177°C / 350°F. Flip beef patty & cook for another 3:30 minutes., temperature at 74°C / 165°F (CCP3)
NOTE: do not press down on patty or move around - goal is to create a nice crust. - 2. Submerge french fries in a 177°C / 350°F fryer for 4:15 minutes, until golden brown, temperature at 68.3°C / 155°F (CCP3) Shake fryer basket to remove excess oil.
- 3. Place cooked french fries into a mixing bowl & toss with grandpa j’s seasoning salt.
- 4. Toast burger bun on flat top until golden brown.
- 5. Sauté mushrooms on flat top, as per prep, with garlic spread, temperature at 68.3°C / 155°F (CCP3). Next, remove bun from flat top.
- 6. Spread WINGS Burger Sauce on top and bottom bun.

7. Assemble burger in this order:
• Bun heel
• Shredded lettuce
• Tomatoes
• Red onion
• Burger patty
• Cheddar cheese slice
• Sautéed mushrooms
• Bacon strips
• Crown of the bun
• Gently place bamboo skewer inserted into bun crown. Ensure not to press down on the bun. - 8. Place burger & fries in the open area of the sheet pan (Refer to picture)
- 9. Ensure rim of sheet pan is clean. Serve immediately.
