- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. In a sauté pan over medium heat, add Alfredo sauce and shredded marble cheese. Using a rubber spatula mix well to combine. Bring the sauce to a bubble and than turn it down to a simmer, reaching an internal temperature at 165°F. (CCP3)
- 2. Place pasta in bain marie for 1 minute, reaching an internal temperature of 165°F. (CCP3)
- 3. Remove pasta and transfer the noodles to the cheese sauce mixture and mix well with a rubber spatula, to combine.
- 4. Using a rubber spatula transfer pasta mixture into the bowl.
- 5. Top with shredded marble cheese
- 6. Ensure rim of the plate is clean. Serve immediately.
