- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Place the one half flour tortilla shells on the flat top.
- 2. Evenly spread the cheese on the top of the tortilla.
- 3. Fold the tortilla in half and continue to melt the cheese.
- 4. Once the shell is golden and the cheese has melted, remove from the flat top and place on the cutting board. Cut each piece into half (yielding 2 pieces in total).
- 5. Serve with French fries and a ramekin of sour cream.
