- PLATE: 1/4" sheet pan (smaller sheet pan), WINGS liner paper, portion cup
- HOLD: To order
- NOTE: Can sub Cauli' Wingerz = 1 portion bags
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Prepare hoagie with garlic butter and place buttered side down onto flat top. Toast for 3 - 4 minutes.
- 2. On the toasted, buttered side evenly spread shredded cheese and place into the oven at 350°F to melt the cheese, approx. 2 minutes, temp at 165°F (CCP3)
- 3. Prepare wings as per guests preference & cooking procedure, internal temperature reaches 165°F (CCP3)
- 4. Prepare yam fries as per recipe, temperature at 165°F (CCP3). Add salt and pepper mix PREP to yam fries.
- 5. Arrange yam fries, wings on each side of the plate and place prepared cheese bread crossed over the top of the plate (cut on a sharp bias, corner to corner. Refer to picture)
- 6. Place roasted red pepper aioli beside the yam fries.
- 7. Ensure rim of plate is clean. Serve immediately.
- IMPORTANT NOTE: Timing and presentation are the most important things to keep in mind when preparing the Hat Trick Platter. Ensure that no item gets cold while waiting for the others to cook, and that each item appears as a distinct component of the whole dish.
