- PLATE: Tray
- FOLLOWING THESE PROCEDURES: The wings will reach an internal temperature of 165°F or more, maintaining for 15 seconds. (CCP3)

NOTES: Single wing purchases are served on side plates.
Gluten Smart/Halal wings are to be microwaved then baked from frozen. Note Gluten Smart flavours.
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Place gluten smart frozen wings in a 1200 watt microwave for 2 minutes (depending on microwave strength). Bake wings in the oven at 350°F for 15 minutes. (CCP3)

2. Toss wings in a bowl with the wet sauce or dry seasoning.
Ensure to toss well so that the wings are coated with the seasoning or sauce. - 3. Serve stacked up high and neatly on the plate.
- 4. Ensure rim of the plate is clean. Serve immediately.
- IMPORTANT NOTE: (CCP3) if chicken does not reach minimum temperature, continue cooking until temperature is reached.
- Ensure that wings are stacked neatly and thoroughly coated in sauce/seasoning.
- For Halal, any of our wings seasonings or sauces can be used. Gluten Smart flavors are restricted - refer to menu for choices.
- Pierce a bamboo pick with a stickle into a wing to identify the flavour.
