- PLATE: Tray plate, gravy bowl, side plate, beverage napkin
- HOLD TIME: to order
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Submerge fries in a 350°F fryer for 4:15 minutes, until golden brown, temperature 155F (CCP3). Shake fryer basket to remove excess oil.
- 2. Place cooked fries into a mixing bowl with Grandpa J’s seasoning salt & toss gently. (CCP3)
- 3. Ladle 3 oz. of heated gravy into a gravy bowl. NOTE: Gravy is kept on the steam table.
- 4. Plate fries onto the middle of the plate and gravy on a beverage napkin lined side plate. (Refer to picture)
- 5. Ensure the rim of the plate is clean & serve immediately.
