- QUALITY INDICATOR: The ribs should appear to be plump and crispy on the outside.
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Submerge dry ribs in a 350°F deep fryer for 8 - 10 minutes to reach a minimum internal temp of 165°F (CCP3)
- 2. Remove from oil and shake off excess. Place in a mixing bowl and toss with salt and pepper mix.
- 3. Place seasoned ribs at centre of the plate. Scrape any leftover sauce or seasoning from the mixing bowl and spread evenly onto the ribs.
- 4. Ensure rim of plate is clean. Serve immediately.
