- PLATE: sheet pan with WINGS liner paper

- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Place Garlic Spread on 2 pieces of toast, play on flattop to brown.
- 2. Take the cooked chicken breast and butterfly open, place on flattop to warm, place bacon on flattop to warm.
- 3. Place bacon on flattop to warm.
- 4. Once sourdough bread is toasted, spread garlic aïoli on both pieces.
- 5. Building from bottom piece, layer in order: Chicken breast, bacon, lettuce, tomato.
- 6. Place top piece of sourdough. Pat pickle slices on paper towel to remove excess juice. Fold pickles slightly and skewer on each end of sandwich. Cut on bias.
- 7. Place on sheet pan with WINGS liner paper.
