Churro Bites

- Recipe Instructions:
- PLATE: 1/4 sheet pan, branded liner, gravy bowl, portion cup, cast iron skillet
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Submerge churros into deep fryer for 3 minutes until golden brown. Internal temperature reaching 165°F. (CCP3)
- 2. With tongs, put churros into a mixing bowl, than add 1/2 of the cinnamon sugar (reserve other half for garnish) and gently toss to combine. NOTE: cinnamon sugar is provided in the churro box.
- 3. Place liner paper into the skillet and push the center down by hand and firmly around the circumference of the skillet. (Refer to liner paper crinkling steps below)
- 4. Place churros into the skillet with the crinkled liner paper and than transfer the churro filled skillet onto the sheet pan - with the handle tucked into the corner of the sheet pan. (Refer to picture). Add handle cover.
- 5. Sprinkle the rest of the cinnamon sugar evenly over top of the churros. Add 1 scoop of vanilla ice cream into a gravy bowl, garnish with a sprig of mint and place onto the bottom right hand corner of the sheet pan. Put 1 portion of caramel sauce onto the top right corner.
- IMPORTANT NOTES:
- PLATING: PLATING: LINER PAPER CRINKLING: center the liner paper over the skillet evenly so the center of the liner paper is at the center of the skillet. Push the liner paper down firmly around the edges/circumference of the skillet. (Refer to picture) - Training Video Available.
- PRE-HEATED SKILLETS: PRE-HEATED SKILLETS = leave it under the heat lamp for use. Stack all the cast iron skillets under the heat lamp to keep them warm so that they are ready to use.
- Always tuck handle of skillet in the corner of sheet pan (refer to picture)
- Ensure the handle cover is clean and not soiled
