- Recipe Instructions:
- PLATE: Round White Plate, Small White Bowl, Ramekins
- HOLD TIME: to order
- NOTE : 1 portion = 2 Chicken Strips
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Submerge fries into a 177°C / 350°F fryer for 4:15 minutes until golden brown, temperature at 68.3°C / 155°F (CCP3) Shake fryer basket to remove excess oil.
- 2. Place cooked fries into a mixing bowl & toss with Grandpa J’s seasoning salt. Set aside for plating.
- 3. Submerge frozen chicken strips in a 177°C / 350°F deep fryer for 5-6 minutes to reach a minimum internal temperature of 74°C / 165°F. (CCP3)
- 4. Plate cooked chicken strips side by side in a round white plate along with the side of fries in small white bowl. (Refer to picture)
- 5. Plate with 1 ramekin of Ketchup and 1 ramekin of Honey Mustard Sauce
- 6. Ensure rim of the plate is clean. Serve immediately.
