NOTES:
• All burgers come with a bamboo pick
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Slice and butter Mini Brioche buns and cook on flattop until golden brown
- 2. Evenly season beef patties with Montreal steak spice and put on the flat top and cook for 4 minutes per side, temperature at 74°C / 165°F. (CCP3)
- 3. Once patties are cooked place cheese (1 piece split in 2) on patties and allow to melt. Each patty gets a half slice
- 4. Spread WINGS Burger Sauce on top and bottom bun.

5. Next, assemble burger in this order:
• Bun heel
• Lettuce
• Tomatoes
• Red onions
• Beef patty + Cheese
• Bun crown
• Gently place bamboo skewer inserted into bun crown. Ensure not to press down on the bun. - 6. Place burgers on rectangle plate
- 7. Ensure rim of sheet pan is clean. Serve immediately.
