Cajun chicken quesadilla

- PLATE: Sheet pan, WINGS liner paper, bamboo portion cup
- HOLD TIME: To order
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1.Submerge french fries in a 350F/177C fryer for 4:15 minutes until golden brown, temperature at 165F. (CCP3) Shake fryer basket to remove excess oil.
- 2. Place cooked french fries into a mixing bowl & toss with Grandpa J's seasoning salt.
- 3. Put diced chicken portion into a mixing bowl, add Texas Dry Rub mix and gently mix together. NOTE: if cutting pre-cooked chicken to order use the dice cut (1/2" slices julienne, 1/4" dice)
- 4. Put chicken mixture on flattop and heat until temperature at 165°F (CCP3). Set aside for assembly.
- 5. Place tortilla shell on flat top & evenly spread cheese mix over the tortilla shell.
- 6. Evenly distribute onto one side of the shell; diced tomato, green onion, diced jalapeños, heated spicy chicken.
- 7. Flip the cheese side of the shell over the mixture side of the shell.
- 8. Cut the quesadilla in 4 equal triangles.
- 9. Place ramekins of sour cream and salsa in the center bottom of the lined sheet pan.
- 10. Place french fries on the open area.
- 11. Arrange cut quesadillas around the sour cream

12. Ensure rim of the plate is clean. Serve immediately.
- IMPORTANT NOTE
- Please note quesadilla now comes with a ramekin of sour cream, and a ramekin of salsa.
