- PLATE: Starter bowl, beverage napkin, dinner plate (liner)
- HOLD TIME: to order
- QUALITY INDICATOR: Cheese is melted & bubbly
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. In a sauté pan over medium heat, add an 8 oz. ladle of soup. Cook for approx. 3 - 4 minutes, reaching an internal temperature of 165°F. (CCP3) Continue to stir soup with a rubber spatula.
- 2. Blanche broccoli, in a bain marie, for 1 minute.
- 3. Carefully ladle 8 oz. of soup into the bowl.
- 4. Garnish with shredded marble cheese, blanched broccoli floret(s) and garlic toast - plated on the dinner plate. (Refer to picture)
- 5. Place beverage napkin onto dinner plate and than soup bowl. (Refer to picture)
- 6. Ensure rim of the plate is clean. Serve immediately.
- IMPORTANT NOTE:
- Sub soup size = 8oz ladle, topped with a small pinch (0.25 oz. "a pinch") of shredded marble cheese only (no broccoli for garnish)
