- PLATE: Pasta bowl, portion cup, WINGS liner paper
- HOLD TIME: to order
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Submerge fries in a 350°F fryer for 4:15minutes until golden brown, temp at 155°F (CCP3). Shake fryer basket to remove excess oil.
- 2. Place cooked french fries in mixing bowl with texas spice and toss gently. (CCP3)
- 3. Line pasta bowl with one WINGS liner paper sheet and pour the seasoned fries into the center of the paper.
- 4. Evenly spread cheese mix over the seasoned fries.
- 5. Place diced tomatoes and diced jalapeños on top of the cheese, save green onions for garnish.
- 6. Bake in the oven at 350°F, low fan, until cheese melts - no more than 5 minutes, internal temperature reaches 165°F (CCP3)
- 7. Next, remove bowl from the oven and with a free hand, pull the paper to loosen and transfer entire dish onto a clean, cool, pasta bowl.
- 8. Garnish the top with chopped green onions and add a portion of BBQ sauce into a portion cup, then place on rim of the plate. (Refer to picture)
- 9. Ensure rim of plate is clean. Serve immediately.

- Please note jalapenos have been changed to DICED
