Bacon Mac & Cheese Skillet

- PLATE: 1/4 sheet pan, branded liner, cast iron skillet, handle cover

- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. In a sauté pan over medium heat, add alfredo sauce and 4oz of shredded marble cheese (reserve 1oz. for the topping). Bring to a bubble and than reduce temperature. Temp at 165°F (CCP3)
- 2. Add pasta to bain marie for 1 minute. Next, remove pasta and transfer the noodles to the cheese sauce mixture and mix well using a rubber spatula.
- 3. Using a rubber spatula, transfer pasta mixture into the warm skillet. Evenly sprinkle 1oz of shredded cheese over top of the pasta mixture and than sprinkle panko on top of the cheese.
- 4. Place skillet on a lined baking sheet and put it in the heated oven at 350F/177C - bake for approximately 5 minutes, until cheese is bubbling, with the internal temperature reaching 165F. (CCP3)
- 5. Using half a hoagie bun, spread garlic butter onto the open side of the bun and place buttered side down onto the flat top. Toast for approx. 3-4 minutes, or until golden brown. Cut garlic toast diagonally. (Refer to picture) NOTE: ensure that each cut is a very sharp, pointed cut on a 45-degree angle.
- 6. Rough chop 2 strips of cooked bacon into 1/4-inch pieces. (Refer to picture)
- 7. Carefully transfer the skillet to the lined sheet pan. Garnish with chopped bacon and green onions. (Refer to picture).
- 8. Place a handle cover and carefully plate the skillet into the corner of the sheet pan and serve with garlic toast. (Refer to picture)
- 9. Serve immediately.

IMPORTANT NOTE:
- PRE-HEATED SKILLETS: leave it under the heat lamp for use. Stack all the cast iron skillets under the heat lamp to keep them warm, so that they are ready to use.
- Ensure the handle cover is clean and not soiled.
- Garlic Toast is the new Ciabatta Hoagie (not pictured).
