- Recipe Instructions:
- GLASS/PLATE: Coffee cup, tea pot, side plate, cocktail napkin and teaspoon
- IMPORTANT NOTES:
- Use a cocktail napkin when setting up coffee or tea service. This is so the cups and tea pot do not slide and helps ensure proper balance of everything.
- Cup, teapot, spoon, and tea bag must all come together on a side plate
- Do not open teabag & insert it into the hot water or cup. Leave it in the package for the guest.
- Always ask guest if they would like cream & sugar
- Use “tray” rectangle plate instead of round plate.
- PROCEDURE
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Rinse teapot with hot water, drain, then refill with hot water.
- 2. Place guest’s choice of tea on a #10 platter with teapot. (See picture)
- 3. If lemon is requested, using tongs, place one wedge on plate next to teapot.
- 4. If cream is requested, place on the #10 platter next to the teapot.
- 5. Place sugar caddy next to #10 platter when served to the guest at the table.
- 6. Free refills. Give guest additional full tea service including 1 tea bag and lemon wedge (if requested). (A fresh mug is not necessary.)

HOT BEVERAGES SAFETY PROCEDURE
- HOT BEVERAGE SERVICE
- 1. Always remove cup by the handle from the table when pouring refills. Never touch the rim of the cup.
- 2. Never reach over guests with a pot to pour a refill.
- 3. Fill hot beverages ½ inch from the top of the cup to avoid splashing hot beverage.
- 4. Always ask guest’s permission prior to refilling a cup.
- 5. Never set hot items directly in front of children.
- 6. Always place hot items out of reach from children.
- 7. When serving hot tea, remind guests that the teapot and water are very hot.
- 8. When filling a tea pot, add water just below spout opening. This prevents the hot water from splashing out.
- PROPER COFFEE HANDLING AND POURING PROCEDURES
- 1. Carry coffee pot by handle only (never by its neck).
- 2. Keep one hand free and place in front of the coffee pot when carrying coffee into the dining area to prevent accidental guest/co-worker contact.
- 3. NEVER refill a coffee cup sitting on the table or in the guest’s hand.
- 4. Take the cup off the table or out of the guest’s hand, turn your body to the side away from the guest to refill the cup.
- 5. NEVER reach over a guest with a pot to pour a refill.
- 6. NEVER pour coffee within reach of small children.
- 7. Do not set coffee pots on tables.
- CREAM FOR COFFEE/HOT TEA
- 1. Ask the guest if they would like cream.
- 2. If the guest responds yes, we will automatically bring 2 creamers. (If three guests request cream, we will automatically bring 6 creamers.) The creamers may be divided in a small dish (au jus bowl) or set directly on the side plate or plate that the hot beverages are served on.
- 3. If guest requests additional cream, we ask how many, then deliver that amount.
- 4. Once the creamer is set on the table for a guest, it may not be returned to the service station for future use. It must be discarded.
