PART 2: SANGRIA | ||

PART 3: SERVICE | ||
Sangria | 1 | oz |
Frozen Bellini Mix | 7 | oz |
- Recipe Instructions:
- GLASS: Single = single rocks glass, double = double rocks glass
- TOOLS: Litre pail, shot glass
- NOTES: If a double bellini is ordered, serve in a double rocks glass and add 1 ounce of rum.
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
- 1. Combine all of PART 1, except for Sprite into a 16 litre pail with lid and shake to mix.
- 2. Next, add Sprite and again shake to mix and combine – this is to properly dissolve the peach crystals.
- 3. Next, pour into slush machine. Allow time to freeze.
- 4. Combine all of PART 2 into an empty large squeeze bottle. Shake well to combine.
- 5. Label, date and store in the cooler or in the ice well, that isn’t used for guests’ ice.
- SERVICE
- 1. Add 1 oz of sangria into the glass.
- 2. Next, add 7 oz of Frozen Bellini mix to fill the glass and produce a signature “peak”. (Refer to picture).
- 8. Serve immediately.
- IMPORTANT NOTES:
- If a double bellini is ordered serve in a double rocks glass & add 1 ounce of rum.
- Use single rocks glass for single serving
- Use double rocks glass for double serving
- Follow the recipe exactly for consistency
