- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.

1. Portion mashed potatoes and heat in the microwave for 1 minute. (1800wt)
(CCP6)
2. Heat Shaved beef on flattop, for approximately 3 minutes, until heated to 165 degrees. Break apart beef to create small chunks
3. Place 3 mini yorkies in the convection oven for 3 mins at 325F. (CCP6)
4. Place the heated yorkies evenly onto your tray plate and evenly distribute the mashed potatoes first and pot roast pieces second, into the middle of the yorkies.
5. Top each stuffed yorkie with .5 floz gravy. Add Horseradish Aioli (PREP) to top of each yorkie, 0.5oz on each Yorkshire. Garnish with chopped parsley.
6. Ensure the rim of the plate is clean. Serve immediately.
