- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.

1. Remove the required quantity of mushroom ravioli from the freezer while still in its original
packaging.
2. Place the packaged ravioli on a tray or sheet pan to catch any potential drips or condensation.
3. Store the tray with ravioli on the shelf of the cooler at or below 4°C (40°F).
4. Label the packaging with the date and “Thawing” to ensure proper rotation and food safety tracking.
5. Allow ravioli to thaw under refrigeration for 8-10 hours, depending on portion size and packaging thickness. Store in a portioning bag with 7 pieces per portion.
6. Before using it, check that ravioli is fully thawed with no frozen centers; do not thaw at room temperature.
Note: Ravioli may be cooked from frozen in an emergency; however, this is not recommended as it increases cooking time and risks serving undercooked filling. You must ensure the internal temperature reaches the proper level before serving.
