- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.

1. Remove the required quantity of mushroom gyoza from the freezer, keeping it in its
original packaging.
2. Place the packaged gyoza on a tray or sheet pan to catch any drips or condensation.
3. Store the tray with gyoza on the shelf of the cooler at or below 4°C (40°F) .
4. Label the packaging with the date and “Thawing” to ensure proper food safety tracking and rotation.
5. Allow the gyoza to thaw under refrigeration for 12-24 hours, depending on portion size and packaging. Label & store in portioning bags 6 pieces per bag.
6. Confirm the gyoza are fully thawed before use; avoid thawing at room temperature to maintain quality and safety.
Note: Gyozas may be cooked from frozen in an emergency; however, this is not recommended as it increases cooking time and risks serving undercooked filling. You must ensure the internal temperature reaches the proper level before serving.
