- Recipe Instructions:
- TOOLS: measuring spoons, rubber spatula & mixing bowl
- STORAGE: insert with insert lid
- HOLD TIME: 3 days
- HOT HOLDING: 4 hours on a double boiler (CCP5)
- YIELD: 64 ounces (1 pouch)
- QUALITY INDICATOR: potatoes should be smooth in texture - not lumpy & runny.
- Procedure
Wash/sanitize hands. Thoroughly clean/sanitize food utensils, equipment & work surfaces.
**Important to be in the cooler when portioning this item. To prevent the breading from coming off.**
- 1. Put defrosted mashed potato pouch contents into a mixing bowl.

NOTE:
Squeeze out all contents from the pouch into the mixing bowl - use a rubber spatula to scrape out the rest of the contents.Put defrosted mashed potato pouch contents into a mixing bowl. - 2. Add granulated garlic. (Refer to picture Step 1 & 2)
- 3. Whisk thoroughly to combine & put contents into an insert and cover with lid.
- 4. Label, date & store in cooler at 35F-40F/3.5C-4C until use. (CCP1) (Refer to Step 3)

IMPORTANT NOTES:
- 64 ounces = 1 POUCH of mashed potatoes
- Squeeze out all contents from the pouch into the mixing bowl.
- Do not over mix
- Ensure you thoroughly whisk the potato mixture to evenly distribute the extra garlic added.
